Coffee Brewing and Water Quality
Though the spotlight is often on the coffee bean itself, water plays a pivotal role in determining the quality and character of a cup of coffee. Given that a cup of coffee is roughly 98% water, paying attention to its quality and composition is essential for achieving a balanced brew.
The Chemistry of Extraction
Water acts as a powerful solvent during the brewing process, extracting the compounds that give coffee its complex flavor profile. The minerals present in your water directly influence how those flavors dissolve and balance out in the cup.
Begin with clean, odor-free water without noticeable chlorine. Moderate mineral content generally supports good extraction, but the types of minerals matter as much as the overall Total Dissolved Solids (TDS) reading. Calcium and magnesium help extract desirable flavor compounds, while bicarbonate alkalinity acts as a buffer for acidity. Excessive alkalinity can mute vibrant acidity, while very low-mineral water can produce an unbalanced or underdeveloped cup.
While neutral pH (7) serves as a common reference point, pH alone tells only part of the story without considering the water’s mineral buffer. Chlorine and chloramines, commonly used in municipal tap water, can also introduce noticeable off-flavors and harsh aromas even in trace amounts.
Optimal Water for Brewing Coffee
Optimal brewing water strikes a balance: it should contain enough beneficial mineral content to enable proper extraction while remaining free from undesirable flavors and odors.
As a useful reference, the Specialty Coffee Association (SCA) has historically identified 150 ppm (or mg/L) TDS as a target, while recognizing a wider acceptable range of approximately 75–250 ppm. However, TDS alone does not reveal which specific minerals are present—hardness and alkalinity provide a much clearer picture of how water will interact with your coffee.
Unlocking Coffee’s True Potential
Using a standard carbon filter is often the easiest first step to improve your home brewing, effectively reducing chlorine and unpleasant tap odors. Keep in mind, however, that basic carbon filtration won’t materially alter mineral hardness, alkalinity, or TDS. If your tap water is exceptionally hard or soft, exploring specialized filtration or remineralizing distilled water can help you fine-tune your brew even further.
